    milk, full-fat
  • 1
    vanilla pod
  • 1
    lemon, organic
  • 1
    cinnamon stick
  • 80 g
    cornflour
  • 3
    egg yolks
  • 100 g
    brown raw cane sugar
  • 1 tbsp
    butter
  • Additionally:

  • 1 tsp

    flour
  • 100 g

Pour 500 ml of milk into a saucepan. Scrape out the seeds from the vanilla pod. Peel the zest of the lemon with a peeler, but do not remove too much of the white pith. Add the lemon zest, cinnamon stick, vanilla seeds and the empty vanilla pod to the milk. Bring the milk briefly to the boil. Remove from the heat and leave to infuse for 5 minutes.

Whisk the cornflour into the remaining milk until smooth. Whisk the egg yolks with the sugar. Add the milk and cornflour to the egg and whisk thoroughly.

Pour the flavoured milk through a sieve and return to the saucepan. Heat over a medium heat and stir in the egg yolk mixture. Continue to cook gently, stirring, until the mixture has thickened.

Butter a rectangular dish, about 32 × 24 cm. Pour in the custard mixture, cover with cling film and refrigerate for at least 6 hours, preferably overnight.

Heat the olive oil in a pan to around 160°C. Remove the set custard from the dish and cut into rectangles of about 3 × 5 cm. Whisk the eggs in a bowl. Put the flour on a plate. Mix the sugar with the Oatmeal Spice.

Dredge the rectangles in the flour, then dip them into the eggs and place them in the frying pan. Fry for about 1 minute on each side until golden. Drain on a paper towel briefly, then toss in the Oatmeal Spice mixture.
