Carefully peel the orange with a knife and separate the segments. Squeeze the juice from the remaining pulp into a bowl. Wash the apples, core them and cut into thin wedges. Cut the pomegranate in half and tap the seeds into a bowl with a spoon.

For the dressing, add all the ingredients to the bowl with the orange juice and mix well. Season with salt.

Wash the kale and spin dry, then remove the woody stem and cut the leaves into bite-sized pieces. Place in a bowl with the apple slices and orange segments and mix thoroughly with the dressing. Divide onto 4 plates and top with the pomegranate seeds, walnuts and Original Salad Topping.
