Separate the eggs and whip the egg whites together with the salt. Trickle in the sugar while whipping, then set aside for the time being.

Whisk the egg yolks together with the milk in a bowl. Sift in the flour and baking powder and mix well. Stir through the Oatmeal Spice. Then carefully fold in the egg whites.

Pour the batter into a piping bag. Brush a coated pan with oil and heat. Pipe 3 pancakes into the pan and cover with a lid. Fry over a medium heat for 4 minutes, then carefully flip the pancakes and fry for another 3 minutes with the lid on.

Remove the pancakes from the pan and serve with maple syrup and fresh berries.
