Wash, dry and finely chop the parsley. Peel the garlic. Top the chilli and cut in half. Peel and halve the shallots. Zest and juice the lime.

Blend olive oil, honey, parsley, garlic, chilli, shallots, lime zest and lime juice to a smooth paste in a blender.

Put the chicken thighs and Chicken Seasoning in a bowl. Pour over 3/4 of the marinade and make sure everything is thoroughly coated. Cover and chill the rest of the marinade. Allow the chicken to marinate for 2 hours.

Preheat the oven to 240°C (top/bottom heat) or fan 220°C. Cook the chicken thighs in a baking tray for 30–40 minutes, turning regularly, until golden and crispy.

Serve the chicken thighs with the rest of the marinade as a dip.
