Preheat the oven to fan 200°C.

Wash the potatoes, dry thoroughly and prick all over with a fork. Place on a baking tray lined with baking paper, drizzle with olive oil and sprinkle with salt. Bake for 45 minutes until cooked through.

While the potatoes are baking, prepare the BBQ chicken filling. Heat 2 tbsp oil in a roasting tin, seasoning the chicken with salt and then fry on all sides for 2–3 minutes over a high heat until golden brown.

Mix the ketchup, apple juice, BBQ Allrounder and mustard in a bowl and spread over the chicken breast fillets.

Bake in the oven with the potatoes for 15 minutes.

Remove the chicken from the oven, shred with two forks, mix with the sauce and put back in the oven for a further 10 minutes.

When the potatoes are cooked, cut them open and fluff up the inside with a fork, adding a knob of butter and a pinch of salt.

Stuff the potatoes with the BBQ chicken filling and sprinkle with Cheddar.

Place the filled potatoes back in the oven for a further 10 minutes until the cheese has melted.
