Preheat the oven to fan 200°C.

Wash the potatoes, dry them thoroughly and prick them all over with a fork. Place on a baking tray lined with baking paper, sprinkle with salt and bake for 50–60 minutes until cooked through.

While the potatoes are baking, prepare the filling. Heat the oil in a frying pan over a medium heat and sauté the asparagus spears for 7–10 minutes. Dice the sun-dried tomatoes, add to the pan with the Garlic Pepper and fry briefly.

As soon as the potatoes are cooked, cut them open and fluff up the inside with a fork, adding a sprinkle of salt and a knob of butter.

Fill the potatoes with the asparagus and tomatoes and sprinkle with the cheese.

Place the loaded potatoes back in the oven for a further 5–10 minutes until the cheese has melted.
