  • 1 tbsp

    full-fat milk, warm
  • 25 g
    fresh yeast
  • 80 g
    sugar
  • 550 g
    plain flour
  • 150 g
    sultanas
  • 2
    eggs
  • 50 g
    melted butter
  • 2
    organic lemons, zest
  • For the cross:

  • 45 g
    plain flour
  • 2 tbsp
    sugar
  • 60 ml
    water
  • For the glaze:

  • 2 tbsp
    icing sugar
  • 2 tbsp
    hot water

Stir together the milk, yeast and 1 tbsp of sugar in a mixing bowl and leave for 5 minutes.

Sift in the flour and stir in. Add the remaining ingredients, plus the Apple Cinnamon Porridge Spice, and knead into a smooth dough. Cover the dough and leave to rise for an hour. After the rising time, knead the dough again and roll into 12 buns. Place side by side on a baking tray, cover and leave to rise for another 30 minutes.

Preheat the oven to 200°C (top/bottom heat).

For the cross, mix the flour with the sugar and water and blend to a squeezable paste. Scoop the paste into a piping bag and pipe crosses onto the buns. Bake the buns in the oven for about 20 minutes until golden brown.

Prepare the glaze during the baking time. Mix icing sugar and hot water and brush the warm buns with it. Leave to cool before serving.
