    water
  • 500 ml
    white vinegar
  • 200 g
    sugar
  • 2 tbsp
    mustard powder
  • 2 tbsp
    ground turmeric
  • 2 tbsp
    cornflour
  • 1 tbsp
    ground ginger
  • 1 tbsp
    yellow mustard seeds

Wash all the vegetables. Cut the cauliflower into small florets. Trim the green beans and chop into small pieces. Peel and dice the carrots and onions. Place them all in a large bowl.

Dissolve the salt in the water and pour over the vegetables. Cover and leave to soak overnight (or for at least 12 hours).

Drain the vegetables and rinse them thoroughly under cold running water to remove excess salt. Place the vinegar, sugar, mustard powder, turmeric, cornflour, ground ginger and mustard seeds in a large saucepan. Stir well to combine and bring the mixture to a boil.

Add the drained vegetables to the saucepan. Reduce the heat and simmer gently for 10–15 minutes, or until the vegetables are just tender but still retain a bit of crunch. Spoon the hot piccalilli into sterilised jars, ensuring the vegetables are well covered by the pickling liquid. Seal the jars with sterilised lids.

Allow the jars to cool completely. Store in a cool, dark place for at least 2 weeks to allow the flavours to mature before using.

To serve, spread a good tablespoon or so on a slice of thickly cut sourdough bread. Top with 2 pinches of Sandwich Seasoning and enjoy!
