Wash the potatoes and cut into 1 cm slices. Cut these slices into chips 1 cm thick. Place the potatoes in a large bowl, cover with boiling water and leave for 60 minutes.

Drain the potatoes and dry thoroughly with a large cloth.

Heat plenty of oil in a deep-fat fryer or a large pot to about 160°C. Working in batches, deep-fry the chips in the hot oil for around 5 minutes. Remove the chips and leave to rest for 5 minutes.

Heat the oil again, this time to 185°C. Working in batches, deep-fry the chips for around 3 1/2 minutes until golden brown.

Place the finished chips in a bowl and toss in Chips Seasoning. Serve immediately.
