Preheat the oven to 210°C (top/bottom heat).

Wash the new potatoes, cut them in half and toss them in olive oil and 2 pinches of Sandwich Seasoning. Put them on a baking tray lined with baking paper and roast for 15 minutes.

Meanwhile, bring a saucepan of water to a boil and cook the eggs for 7 minutes for jammy centres. Shock with cold water, then peel and cut in half.

Meanwhile, fry the bacon in a dry pan for 4 minutes over medium heat until crispy. Wash and halve the tomatoes. Cut the avocado in half lengthwise with a knife, twist, remove the pit and use a tablespoon to scoop the flesh out of the skin. Cut the avocado into thin slices.

Divide the roast potatoes between two bowls and add the eggs, bacon, tomatoes and avocado. Crumble the feta over the top and garnish with 2 pinches of Sandwich Seasoning.
