Heat the BBQ to around 200°C.

Wash the tomatoes and cut into around thin slices. Peel and finely slice the onion. Wash the rocket and dry in a salad spinner.

For the burger sauce, finely dice the gherkins and stir into the remaining ingredients in a bowl. Keep chilled until required.

Place the burgers onto the hot rack and barbecue for around 5 minutes. Season each burger with two pinches of BBQ Seasoning. Just before the burgers are done, cut the burger buns in half and toast under the grill cut-side down for around 30 seconds.

Spread some sauce over the underside of the burger buns, layer with rocket, onion rings and tomato and finally the patty. Spread some burger sauce over the meat and top with the other half of the bun.
