Put the oil in a bowl with garlic, onion, salt and our Vegetable Allrounder. Mix well and set aside.

Wash the aubergines and half lengthwise. Put them onto a tray, and brush both sides with the marinade.

Preheat the BBQ. Place the aubergine halves cut-side down onto the rack over indirect heat and close the lid. Turn after 5 minutes and continue to grill. Remove from the BBQ when soft and cooked through, but still holds its shape.

Prepare the dressing by mixing the yoghurt, garlic, mango chutney, milk, salt and the Curry Madras curry powder.

Drizzle the dressing all over the top of the grilled aubergines and serve the rest on the side for dipping.

Optional: Sprinkle the grilled aubergines with fried onions, raisins and fresh coriander.
