Cut the avocado in half, twist to open, remove the stone and scoop out one half of the avocado from its shell with a spoon. Slice about half a centimetre thick.

Break the egg into a non-stick frying pan and cook over a medium heat on both sides until the yolk is firm.

Cut halfway up the middle of the nori sheet. Divide the ingredients into four on each quarter of the nori sheet. Sprinkle the Avocado Topping over the avocado and fold the quarters together. Cut the tortilla in half and serve.
