Preheat the oven to 180°C (top/bottom heat).

Salt the salmon fillets and place them skin-side down on a baking tray lined with baking paper.

Bake the salmon in the hot oven for 15–20 minutes until cooked through.

While the salmon is in the oven, prepare the courgette noodles. The courgettes can be spiralised into zoodles using a spiraliser or peeled into thin, tagliatelle-like strips using a vegetable peeler.

Wash and halve the cherry tomatoes.

Mix the Aglio e Olio Seasoning with the olive oil in a small bowl.

Heat a large frying pan over a medium heat and add the olive oil and Aglio e Olio Seasoning. Once hot, add the courgette noodles and sauté for 3–4 minutes until the courgettes are tender but still firm to the bite.

Squeeze the juice of half a lemon and add to the noodles with the halved cherry tomatoes; mix well. Cut the other half of the lemon into slices or wedges and set aside for serving.

Remove the baked salmon from the oven and plate up with the courgette noodles. Add a lemon wedge to each plate and garnish with the fresh parsley.
