    small red onion
  • 1 bunch
    basil
  • 1 bunch
    parsley
  • 100 g
    pomegranate seeds
  • 2
    limes, juiced
  • 3 tbsps
    olive oil

Prepare the couscous according to the instructions on the pack, then drain through a sieve and set aside.

In the meantime, prepare the vegetables. Start by washing them and patting them dry. Core and dice the tomatoes, cucumbers and peppers. Cut the avocado in half, remove the pit and then scoop out the flesh with a spoon before dicing. Peel and finely dice the onion. Finely chop the basil and parsley.

In a large bowl, season the couscous with lime juice, olive oil and 4 pinches of Avocado Topping. Fold in all the other ingredients & let the salad sit (in the fridge) for 20 minutes. Add more Avocado Topping to taste.
