Put the coffee grounds in a large mixing jug, pour the water over the coffee and add the Coffee Kiss. Stir thoroughly.

Cover the jug and leave to infuse for 12–24 hours at room temperature or in the fridge. The longer you leave it, the stronger the final syrup will be.

Pour the cold brew into a large saucepan through a fine-mesh sieve or cheesecloth to remove the coffee grounds.

Add the sugar, then heat the cold-brew coffee, stirring regularly, to dissolve all the sugar. Let it come to a rolling boil and leave to bubble for a few minutes to reduce and thicken up. Store the coffee syrup in sterilised glass bottles in the fridge. It will keep for about two weeks.

How to use the coffee syrup

For one cup of coffee, mix 30 ml syrup with 170 ml hot water or milk. Adjust to taste.

Alternatively, mix the syrup with cold water or milk, adding ice cubes for a refreshing iced coffee.

This recipe produces a strong coffee syrup, yielding about 30 servings when using 30 ml per cup. Feel free to experiment with the amount of syrup or brewing time to make the perfect coffee!
