Preheat the oven to fan 180°C.

Wash the lemon, cut it in half, and cut one half into thin slices. Squeeze the juice from the other half. Peel and halve the garlic cloves. Rinse the rosemary sprig and shake it dry.

Generously season the chicken inside and out with the Meat & Roast Seasoning. Stuff half of the lemon slices, the garlic cloves and the rosemary sprig into the cavity of the chicken.

Mix the olive oil with the lemon juice and rub the mixture all over the outside of the chicken.

Place the chicken in a roasting tin or ovenproof casserole dish and arrange the remaining lemon slices around it. Cover with a lid or aluminium foil and roast in the preheated oven for 90 minutes.

After 90 minutes, remove the lid or foil and return the chicken to the oven for another 15 minutes, or until the skin is golden brown and crispy.

Take the chicken out of the oven and let it rest for at least 10 minutes before carving. Cover loosely with foil to keep the heat in.

Serve with your favourite Christmas sides, such as roast potatoes, roast parsnips and Brussels sprouts.
