Remove the skin and tendons from the chicken breasts and marinate them on a plate with 1 tbsp of olive oil and 2 pinches of Italian Chicken Seasoning. Heat a large frying pan and sear the meat over a medium heat for about 2–3 minutes on each side. Reduce the heat and leave to gently fry over a low heat for about 10 minutes. Turn from time to time.

Peel and finely dice the onion. Wash the tomato, remove the stalk and seeds, and cut into cubes. Drain the olives and roughly chop. Wash the parsley, pat dry and chop very finely. Drain the capers. Put all the ingredients in a bowl. Add the lemon juice to the bowl. Season with the Italian Chicken Seasoning and add the remaining olive oil.

Pour some of the vegetable mixture over the finished chicken in the pan. Serve immediately and enjoy the rest of the vegetables cold or with a piece of bread.
