  • 300 g
    plain flour
  • 160 g
    cold butter
  • 80 g
    sugar

    egg
  • 1 pinch
    salt

    Oatmeal Spice

    cornflour
  • 150 g

For the pastry, bring all the ingredients together quickly, handling it as little as possible, and leave to rest in the fridge for 30 minutes.

Preheat the oven to 190°C (top/bottom heat).

For the filling, drain the cherries and reserve about 300 ml of the liquid. Finely grate the lemon zest and juice the lemon.

Mix the cornflour with a little of the cherry juice. Bring the cherries, sugar and remaining liquid to the boil, then stir in the cornflour slurry and allow to thicken. Finally, stir in the Oatmeal Spice.

Remove the pastry from the refrigerator. Roll out 2/3 of the dough to a thickness of about 1/2 cm thick and place in a greased and floured tart tin. Cut off the overhanging edge cleanly with a knife. Prick the base several times with a fork. Roll out the remaining pastry to about 1/2 cm thick and cut into strips with a ravioli wheel (for the groove pattern).

Spread the cherry filling over the base. Arrange the pastry strips in a grid pattern on the tart. Beat the egg and brush the pastry with it. Then bake in the oven for around 40 minutes until the filling is bubbling and the pastry is golden brown.
