Preheat the oven to fan 200°C.

Remove the leaves from the cauliflower and cut off the stalk. Carefully cut the cauliflower into thick (about 2.5 cm) steak-like slices. Try to leave the florets intact.

In a mixing bowl, whisk together the olive oil and Meat Allrounder. Brush both sides of the cauliflower slices with the marinade.

Place the cauliflower steaks on a baking tray lined with baking paper and roast in the hot oven for 25–30 minutes until the cauliflower is tender and golden brown around the edges. Turn the steaks halfway through cooking to ensure even browning.

To make the dip, stir together the vegan crème fraiche, vegan mayonnaise, lemon juice and Aglio e Olio Seasoning in a bowl, adding salt and pepper to taste.

Remove the finished cauliflower steaks from the oven and leave to cool for a few minutes.

Serve the cauliflower steaks with a generous dollop of dip.


Tip: Goes well with a green side salad and a garnish of fresh dill or squeeze of lemon.
