Peel the carrots and cut them into 1 cm rounds. Peel the onions and dice roughly. Then peel and roughly chop the garlic.

Heat the olive oil in a wide saucepan and sauté the vegetables on a medium heat for 4 minutes. Add the Soup and Stew Allrounder and sauté on low heat for 1 minute. Add the coconut milk and water, bring to the boil and then cook on a medium heat for about 30 minutes.

Meanwhile, wash the spring onions and chives, pat dry and slice thinly.

Puree the soup with a hand blender, and season with salt and freshly ground pepper. Divide between 4 bowls and garnish with the chives and spring onion.
