    rustic mini baguettes
  • 1 tin
    chopped tomatoes (400 g)

Preheat the oven to 210°C or for fan ovens 190°C.

Cut the baguette in half lengthways. Allow the tinned tomatoes to drain in a sieve for 5 minutes.

Wash the vine tomatoes, remove the stalk and cut an approximately 2 cm wide cross into the base.

Bring a saucepan of water to the boil and blanch the tomatoes in the boiling water for around 30 seconds. Remove from the boiling water, and rinse with cold water in a colander.

Allow to cool and remove the tomatoes from their skins, divide into quarters, core and slice. Marinate in a small bowl with olive oil and 4 pinches of Italian Sandwich Seasoning.

Spread the baguette halves with the tinned tomatoes, arrange the sliced tomatoes on top and sprinkle with mozzarella.

Place the baguette halves on a baking tray lined with baking parchment and bake for around 10 minutes.
