  • For the sauce:

  • 2 tbsp
    Dijon mustard
  • 200 ml
    vegetable stock
  • remaining juice from the orange
  • 150 ml
    crème fraiche

Season the salmon fillets lightly with salt. In a mixing bowl, combine the orange zest, 3 tbsp orange juice, 2 tbsp olive oil and the Cajun Seasoning. Add the salmon fillets to the marinade, making sure they are well coated. Set aside for 10 minutes to let the flavours infuse.

While the salmon marinates, prepare the vegetables. Trim the ends off the courgettes and chop them into rough chunks. Peel the carrots and chop them into similar-sized chunks. Peel the red onion and slice it into thin strips.

Heat 1 tbsp olive oil in a large frying pan over medium heat. Add the sliced onion and cook for 2–3 minutes, until softened and translucent. Add the carrots and cook for another 5 minutes, then add the courgettes. Fry everything for another 5–7 minutes, or until the vegetables are tender but still with bite. Season with a pinch of salt.

In a small saucepan, add the remaining orange juice and vegetable stock. Stir in the crème fraiche and Dijon mustard, and let the mixture simmer gently for about 5 minutes, until the sauce has thickened slightly.

Heat a little oil in a separate frying pan over medium heat. Fry the marinated salmon fillets for 3–4 minutes on each side, until they are just cooked through but still slightly pink in the centre.

Place the salmon fillets onto plates, drizzle with any leftover pan juices, and arrange the pan-fried vegetables alongside. Finish with a big spoonful of the creamy mustard sauce.
