  • For the nut topping:

  • 80 g
    cashews
  • 70 g
    ground pistachios
  • 40 g
    rolled oats
  • 30 g
    melted butter
  • 2 tbsp
    spelt flour

Preheat the oven to 160°C (top/bottom heat).

For the topping, roughly chop the cashews and mix with the remaining ingredients and set aside.

Peel and grate the apple. Put the bananas in a mixing bowl and mash with a fork. Add the yoghurt, melted butter, eggs, blueberries, oats and apple, and mix thoroughly. Sprinkle in the Oatmeal Spice. Then sieve in the flour and baking powder and fold through.

Divide the batter into 12 muffin cases and top with the nut topping, pressing down slightly to make sure it sticks. Bake the muffins in the oven for 25 minutes until risen, golden and fragrant. Breakfast is served!
