Carefully crack the eggs into two small glasses. In a saucepan, bring plenty of water to a boil with the balsamic vinegar and a pinch of salt. Turn the temperature down to a low heat, create a whirlpool by stirring with a spoon and carefully slide the eggs one by one into the water. Leave to poach for 4 minutes, then drain on a paper towel.

Cut the avocado in half lengthwise with a knife, twist it, remove the pit and use a tablespoon to scoop the flesh from the skin. Finely dice and mix in a bowl with the olive oil and 3 pinches of salt.

Top the bread with the avo cubes and poached eggs, and garnish with the cress and Sandwich Seasoning.
