  • For the cupcakes:

  • 125 g
    butter, softened
  • 150 g
    sugar
  • 1 tsp
    vanilla essence
  • 2
    eggs
  • 200 g
    dark chocolate
  • 200 g
    plain flour
  • 2 tsp
    baking powder
  • 175 ml
    milk
  • 1 pinch
    salt
  • For the whipped cream:

  • 250 ml
    whipping cream
  • 2 pinches
    sugar
  • For the syrup:

  • 4 tbsp
    agave syrup
  • red food colouring

Cream the butter with the sugar until light and fluffy, and beat in the eggs one at a time. Add the vanilla essence. Roughly chop the dark chocolate.

Preheat the oven to 180°C (top/bottom heat).

Sieve together the flour with the cocoa powder, salt, baking powder and Sweet Allrounder. Add the flour mixture to the wet ingredients along with the milk and beat again. Fold in about two-thirds of the chopped chocolate.

Fill a 12-hole cupcake tray with cases.

Use an ice cream scoop to divide the batter between the cupcake cases. Use the remaining chopped chocolate to top the cupcakes, and bake the whole tray in the oven for about 25 minutes.

For the whipped cream, mix 250 ml cream with 2 pinches of sugar and whip until stiff. Scoop the whipped cream into a piping bag and pipe it onto the cooled cupcakes in the shape of a brain.

Finally, mix the agave syrup with some red food colouring until the desired colour is achieved, and dribble on top of the brains. How deliciously terrifying!
