    whole milk
  • 150 g
    blackberries
  • 1 handful
    mint
  • 2 tbsp
    butter
  • 150 g
    Greek yoghurt
  • 2 pinches
    salt

Separate the eggs. Place the yolks, flour, baking powder, agave syrup, 2 pinches of salt, activated charcoal, Oatmeal Spice and milk in a bowl and stir until the batter is mostly smooth (some lumps are okay).

Beat the egg whites with a hand whisk until stiff and fold into the batter until smooth and creamy.

Wash the blackberries and set a few aside for decoration. Place the rest of the blackberries in a high-sided bowl and blend to a fine puree with a hand blender. Wash and pat dry the mint, remove the stalks and finely chop.

Heat the butter in a small frying pan, pour the batter into the pan one pancake at a time and cook for 2–3 minutes each side until golden brown. Allow the cooked pancakes to cool briefly on a sheet of kitchen paper.

Layer the pancakes alternately with blackberry sauce and yoghurt, and garnish with the fresh blackberries and mint.
