    ripe bananas, mashed
  • 1
    additional ripe banana, sliced lengthways for decoration
  • 75 g
    coconut oil, melted (or vegetable oil)
  • 100 g
    soft brown sugar
  • 1 tsp
    vanilla extract
  • 200 g
    plain flour
  • 1 tsp
    bicarbonate of soda
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 50 g
    chopped walnuts or chocolate chips (optional)

Preheat your oven to 180°C (top/bottom heat). Grease and line a loaf tin with baking paper.

In a large mixing bowl, combine the mashed bananas, melted coconut oil, soft brown sugar and vanilla extract. Stir until well mixed.

In a separate bowl, sift together the flour, bicarb, baking powder and salt. Add the Banana Bread Seasoning and stir through.

Gradually add the dry ingredients to the wet mixture, folding until just combined. Be careful not to overmix. If using, fold in the chopped walnuts or chocolate chips, reserving a few for the top.

Pour the batter into the prepared loaf tin, smoothing the top with a spatula. Arrange the sliced banana on top of the batter, cut side up, for decoration. Sprinkle with the remaining nuts or chocolate chips.

Bake for 45–50 minutes or until a skewer inserted into the centre comes out clean.

Allow the banana bread to cool in the tin for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
