    chorizo (mild or spicy)
  • 100 g
    pancetta
  • 1
    large onion
  • 1 clove
    garlic
  • 2 tbsp
    olive oil
  • 2 tins
    white beans (400 g each)
  • 1 tin
    chopped tomatoes (400 g)
  • 500 ml
    vegetable stock
  • 1 tsp
    smoked paprika
  • salt, pepper
  • parsley

Slice the chorizo. Peel and finely dice the onion and garlic.

Heat the olive oil in a large saucepan and fry the chorizo slices until lightly browned. Remove the chorizo from the pan and set aside.

Fry the pancetta in the same pan until crispy. Remove and set aside.

Add the chopped onion to the pan and fry until translucent. Add the garlic and fry briefly. Add the drained beans, chopped tomatoes and vegetable stock to the pan and stir in the smoked paprika.

Return the fried chorizo and bacon to the pan and mix well.

Reduce the heat and simmer for about 15 minutes, until the stew has thickened a little. Season with salt and pepper to taste.

Serve the stew in bowls, garnish with fresh parsley and a good sprinkle of Smoky BBQ Beans Topping.
