    pomegranate seeds
  • 75 g
    pistachios, shelled
  • olive oil
  • Optional:
    coriander
  • For the hummus:

  • 1 tin
    chickpeas, 400 g
  • 2 cloves
    garlic
  • 3 tbsp
    tahini
  • 1
    lemon
  • 4 tbsp
    olive oil
  • 1 handful
    crushed ice
  • salt

Preheat the BBQ to a medium heat for 10–15 minutes.

Wash the carrots and carefully cut off the tops, leaving 2–3 cm of the leaves sticking out.

Drizzle the carrots lightly with olive oil and season with Vegetable Allrounder.

Place the carrots on the BBQ and cook for 15–20 minutes, turning occasionally, until they are soft and lightly browned.

Lightly toast the pistachios in a dry pan for a few minutes to release their full flavour. Tip onto a clean plate and leave to cool.

Meanwhile, prepare the hummus. Tip the chickpeas into a sieve above the sink and leave to drain. Peel and mince the garlic. Cut the lemon in half and squeeze out the juice from both halves.

Place the chickpeas, garlic, tahini, lemon juice, olive oil, hummus topping and salt in a blender. Add a handful of crushed ice to achieve a creamier consistency. Blend everything until smooth, adding a little water if necessary to achieve the desired consistency.

Roughly chop the pistachios.

Spread the hummus evenly on a serving plate. Arrange the barbecued carrots on top and garnish with pomegranate seeds, pistachios and fresh coriander.

BBQ carrots with home-made hummus
