Preheat the oven to fan 200°C.

Wash the sweet potatoes, dry thoroughly and prick all over with a fork. Drizzle with olive oil and sprinkle with salt. Place on a baking tray lined with baking paper and bake for 45–50 minutes until cooked through.

While the potatoes are baking, prepare the guacamole filling. Cut the avocados in half lengthways with a knife, twist open, remove the stone and scoop out the flesh with a tablespoon. Mash the avocados in a bowl with a fork. Wash and quarter the tomatoes. Peel, halve and finely dice the onions. Wash the lime, cut in half and squeeze out the juice. Then mix the avocado, tomatoes, onion, lime juice and Guacamole Seasoning in a bowl.

As soon as the sweet potatoes are cooked, cut them open and fluff up the inside with a fork, adding a knob of butter and a pinch of salt.

Fill the sweet potatoes with the guacamole and top with the feta.
