    feta cheese
  • 6
    fresh figs
  • 1 tbsp
    olive oil
  • For the salad:

  • 1 tbsp
    JS Original Topping Salad
  • 50 g
    walnuts
  • 250 g
    baby spinach
  • 250 g
    mixed leaves (rocket, lamb’s lettuce)
  • 1 tbsp
    olive oil
  • 1 tbsp
    balsamic vinegar
  • 50 g
    dried cranberries
  • 1 tbsp
    honey
  • salt, pepper

Preheat the oven to fan 180°C.

Wash the figs and cut into quarters. Place the feta cheese and figs in an ovenproof dish. Mix 1 tbsp olive oil with 1 tsp Feta Seasoning. Drizzle over the feta cheese and figs.

Bake for 15–20 minutes or until the cheese is golden brown and bubbly.

Meanwhile, toast the walnuts in a dry frying pan over medium heat for a few minutes until slightly darker in colour and fragrant. Set aside.

Toss the baby spinach and other salad leaves together in a large salad bowl. Dress with 1 tbsp olive oil, 1 tbsp balsamic vinegar, 1 tbsp Original Salad Topping, and salt and pepper to taste.

Carefully take the feta from the dish and place it in the centre of the salad. Arrange the figs around the cheese, add the toasted walnuts and cranberries, and drizzle with the honey for the final touch.
