    tart apples
  • 100 g
    marzipan
  • 3 tbsp
    sultanas
  • 2 tbsp
    chopped almonds
  • 2 tbsp
    sliced almonds
  • 2 tbsp
    butter, softened
  • 2 tbsp
    maple syrup
  • apple juice
  • For the vanilla sauce:

  • 250 ml
    cream
  • 250 ml
    full-fat milk
  • 3 tbsp
    sugar
  • 3
    egg yolks
  • 1
    vanilla pod

Preheat the oven to fan 200°C.

Beat the butter, maple syrup and marzipan together in a bowl for 5 minutes until creamy.

Put the 4 apples into a baking dish. Cut the tops off, cut out the cores with a core cutter and pipe the filling down into the centre of the apples. Top with the flaked almonds and replace the lids.

Pour in some apple juice to cover the bottom of the baking dish. Bake in the oven for 20–30 minutes until soft.

Meanwhile, make the custard. Pour the milk into a saucepan for the vanilla sauce and bring to a boil.

Halve the vanilla pod, scrape out the seeds and add the pod and seeds to the milk in the pan and leave to infuse for about 5 minutes.

Pour the infused milk through a sieve and back into the pan. Add the cream to the milk and slowly bring to a boil.

Whisk the egg yolks with the sugar in a bowl until creamy and add half of the hot milk to the egg yolks, stirring constantly.

Pour the entire egg mixture back into the pan with the rest of the milk and heat over a very low heat for 2 minutes, stirring constantly (be careful not to overheat, otherwise the eggs will curdle) until a creamy consistency is achieved.

Remove the baked apples from the oven and serve with the vanilla custard.
