Preheat the oven to fan 180°C.

Meanwhile, wash the aubergines, cut them in half and score them crosswise with a knife. Drizzle the inside of the aubergines with 4 tbsp olive oil and season with salt.

Place the aubergines on a baking tray cut-side down and place in the oven for 40 minutes. After 10 minutes, place a piece of aluminium foil over each aubergine.

After the 40 minutes, remove the aubergines from the oven and leave to cool for 10 minutes.

Peel and finely chop the garlic and add to a blender with the tahini, lemon juice and the remaining olive oil. Blend until smooth.

Scrape the flesh out of the aubergine with a spoon, add to the blender and blend briefly until creamy.

Scrape the baba ganoush into a bowl and top with the Aglio e Olio Seasoning.
