Avocado and Strawberry Salad | Recipe

Cut the avocado in half lengthways with a knife, twist open, remove the stone and scoop the flesh out with a tablespoon. Cut the avocados into cubes and place in a mixing bowl.

Wash, dry and slice the strawberries. Wash the baby spinach and spin dry.

Add the strawberries, spinach and cashew nuts to the mixing bowl.

For the dressing, whisk together the olive oil and balsamic vinegar in a small bowl. Pour the dressing over the salad and carefully mix everything together.

Season the salad with the Avocado Topping and serve.
