Wash the rocket and spin dry. Peel the mango, remove the stone and cut into cubes. Do the same with the avocado.

Toast the pine nuts in a dry pan over a medium heat until golden brown.

For the dressing, squeeze the orange and mix with olive oil and the balsamic vinegar. Season to taste with 2 pinches of Avocado Topping.

Gently combine all ingredients with the dressing. Arrange on 4 plates and finish with the remaining Avocado Topping.
