Peel the mango and cut into thin strips. Halve the avocado, remove the stone, scoop out the flesh with a spoon and cut into small cubes. Wash the celery, halve lengthways and dice. Peel the onion, halve and finely dice. Clean the spring onions and slice thinly on the diagonal.

Wash and dry the coriander, then roughly chop.

To make the dressing, mix the lime juice with 3 tbsp olive oil and 1/2 tsp Avocado Topping.

Carefully mix the sliced fruit and other salad ingredients with the dressing, then arrange on two plates.

Defrost the prawns thoroughly if using frozen prawns. Fry the prawns in 1 tbsp olive oil on both sides for 2 minutes. Season with Salmon Seasoning. Top the salad with the remaining Avocado Topping and arrange the prawns on top.

Avocado salad with prawns

This fresh-tasting salad with mango, avocado and prawns is a lovely light lunch for two – and can be prepped a little while in advance. Fry up your prawns just before serving and enjoy this fruity little number, perfectly seasoned with Salmon Seasoning (great on all fish and seafood, not just salmon!) and given added crunch with our Avocado Topping. Avocado salads will always be a winner in our eyes, and with the prawns giving an extra boost of protein, this one is going into permanent rotation this summer!
