Prepare the sushi rice according to the instructions on the packet and chill.

Cut the broccoli into florets, wash and chop finely in a blender. Scrape it out into a bowl and marinate with the rice vinegar. Peel the sweet potato, cut into thin slices and then into half-centimetre cubes. Wash the cucumber and cut into thin slices. Halve, pit and peel the avocado and slice thinly. Cut the nori seaweed in short strips.

Cook the edamame in boiling salted water for 2 minutes. In the meantime, melt the butter in a frying pan and brown lightly. Put the cooked edamame in a bowl and season with the melted butter, Avocado Topping and salt, and mix well.

Add the sesame oil to the pan and fry the sweet potatoes for about 5 minutes. Season with salt.

Divide all the ingredients between 2 bowls and garnish with more Avocado Topping.
