For the filling, beat the butter, sugar and egg yolks until fluffy. Gradually add the marzipan and continue beating for 5 minutes until you have a creamy mixture. Add the Apple Cinnamon Porridge Spice and set aside for now.

Wash, quarter, core and finely slice the apples. Bring enough water to cover the apples to the boil in a saucepan. Squeeze the lemon and add the juice to the boiling water. Remove the pot from the heat, add the apples and let them soak for 2 minutes. Then drain and dry on a paper towel.

Preheat the oven to 180°C and grease a cupcake tin.

Roll out the puff pastry and cut 6 strips. Spread with the filling and place 5–6 apple slices slightly overlapping along the top edge. Then roll up tightly and place in the well of the muffin tin. Continue in the same way with the remaining puff pastry.

Place in the oven for 30–35 minutes. Cover with aluminium foil for the last 5 minutes to prevent the edges of the apples from getting too burnt.
