Peel the potatoes, cut into slices half a centimetre thick and then into fries about half a centimetre wide. Place in a sieve and rinse thoroughly with water. Peel and finely chop the garlic.

Bring plenty of water to the boil in a large pan. Place the fries in a bowl and pour over the boiling water. Leave to stand for about 2 hours. Then remove and spread out on a baking tray to air-dry.

Once the fries are dry, place in a large bowl. Add the garlic, olive oil and cornflour. Mix everything well so that the chips are evenly coated.

Preheat the air fryer to 200°C.

Tip the fries in the cooking basket and air-fry for 20 minutes until golden brown and crispy. Shake occasionally during cooking so that they brown evenly.

Sprinkle the Parmesan over the fries and bake for a further 2 minutes until the Parmesan has melted and is slightly crispy.

Remove the fries from the air fryer and place in a large bowl. Sprinkle with the Chips Seasoning salt, mix well and serve immediately.
