  • For the arancini:

  • 300 g
    risotto rice
  • 1
    onion
  • 1 clove
    garlic
  • 100 ml
    white wine
  • 800 ml
    vegetable stock
  • 50 g
    grated Parmesan cheese
  • 2 tbsp
    butter
  • salt, pepper
  • 1
    egg
  • For the mince filling:

  • 2 tsp
    JS Italian Allrounder
  • 300 g
    minced beef
  • 1
    onion
  • 1 clove
    garlic
  • 1 tin
    chopped tomatoes (400 g)
  • 2 tbsp
    olive oil
  • salt, pepper
  • For breading:

  • 100 g
    flour
  • 2
    eggs
  • 100 g
    breadcrumbs
  • cooking spray or a light brushing of vegetable oil

Prepare the risotto. Peel and finely chop the onion and garlic. Sauté in 2 tbsp olive oil until translucent.

Add the risotto rice and sauté briefly until it becomes slightly translucent. Add the white wine and reduce while stirring.

Gradually add the vegetable stock and cook the rice until al dente, stirring constantly.

Stir the Parmesan and butter into the risotto rice. Season with salt and pepper. Stir in the egg and leave the risotto rice to cool completely.

Prepare the mince filling. Peel and finely chop the onion and garlic.

Fry the mince in a pan over medium-high heat with 2 tbsp olive oil until browned. Reduce the heat, add the chopped onion and garlic and fry until translucent.

Add the chopped tomatoes and the Italian Allrounder. Season with salt and pepper and simmer for about 15 minutes until the sauce has thickened. Leave to cool.

Now assemble the arancini. Shape the cooled risotto rice into golf ball–sized portions. Press a hollow into each ball.

Place a teaspoon of the mince filling into the hollow and seal the rice around it to form a ball.

Coat the finished rice and mince balls first in flour, then in beaten egg, and finally in breadcrumbs.

Preheat the air fryer to 180°C.

Lightly spray the arancini with cooking spray or brush them lightly with vegetable oil to help them brown and crisp.

Place the arancini in the air fryer basket, making sure they are not touching (you may need to cook them in batches).

Air-fry for 10–12 minutes, turning them halfway through, until they are golden brown and crispy on the outside.

Once cooked, remove the arancini from the air fryer and let them cool slightly on a wire rack or plate.

Serve warm, ideally with a dipping sauce of your choice.

Air fryer arancini

Arancini are deliciously crispy fried rice balls, here stuffed with a tasty mince filling. Air-frying the arancini eliminates the need for deep frying, making them lighter while still giving you that crunchy exterior. If you don’t have an air fryer, do not panic.
