5 tricks to make your chips crispy

The right form is the be-all and end-all

Which chips type are you? If you're more into thick Belgian chips, then it's best to grab floury potatoes. For crispy, thin French fries à la chef, on the other hand, waxy potatoes are best. Now that the question of variety has been clarified, there is only one thing left to add here. The thinner you cut your fry sticks, the shorter the baking time and the more crunch you can expect.

Grab a fresh kitchen towel and pat the potato sticks as dry as you can. Little secret trick: then dust your chips with some rice flour. This will take the last remaining moisture out of them, and they are ready for the last step!
